  • 3 sprigs of fresh rosemary
  • 1 medium butternut squash
  • 1 tablespoon balsamic vinegar

  • 1 bunch of fresh basil
  • 100g soft goat’s cheese
  • 1 large free-range egg

  • 200g baby spinach
  • 150g ricotta
  • 1 unwaxed lemon
  • 50g Parmesan

Method:

  • Preheat the oven to 200°C/400°F/gas 6.
  • Peel and finely slice the garlic, chop the rosemary, and slice the onions, aubergine, and courgette.
  • Cut the squash into slices, drizzle with oil, season, and roast on a tray for 35 minutes, adding the garlic and rosemary after 20 minutes.
  • Place the peppers on a separate tray and roast for 35 minutes or until blackened. Cover with clingfilm for 10 minutes, then peel, deseed, and slice.
  • Heat oil in a pan and cook the onions for 10-12 minutes until caramelised. Stir in the balsamic and sugar and cook for 5 minutes.
  • Brush the aubergine and courgette slices with oil and place on a hot griddle for 5 minutes until soft and charred.
  • Put the spinach in a colander and pour boiling water over it to wilt. Squeeze dry, chop, and mix with the ricotta, lemon zest, and Parmesan.
  • Grease and flour a 23cm spring-form cake tin. Roll out 420g of pastry to fit the base and sides.
  • Sprinkle half the basil and Parmesan onto the pastry, then layer the veg, starting with courgettes and aubergines, followed by peppers, spinach, and squash.
  • Dot over the goat’s cheese, scatter the remaining basil and Parmesan, and beat and brush the egg around the edge.
  • Roll out the rest of the pastry, place on top, and crimp the edges. Poke a hole in the top and brush with beaten egg.
  • Bake for 45 minutes at 180ºC/350°F/gas 4, covering with foil for the last 10 minutes if it browns too quickly.
  • Cool for 10 minutes in the tin, then remove and serve hot or cold.
