Welcome to Middle Brow Beer Co.

We're a Chicago-based brewery with a difference. We make our own beer, wine, pizza dough and bread, all from locally-sourced ingredients. We're talking Illinois, Michigan, Indiana and Wisconsin. Our beverage programme is over 95% made from produce within 150 miles of home, so we're pretty sure we're more 'local' than any other restaurant in the country.

Our beer

We started life as a brewery back in 2011. We're dedicated to donating 50% of our profits to local social justice organisations (and we ended up donating 112%!). We focus on yeast-blended beers, foeder-solera beers, and grain-forward lagers. We also love to experiment with yeast from our winemaking. We use grains grown in Illinois, Michigan and Indiana, malted by Sugar Creek Malt Co in central Indiana. Our hops are grown in West Michigan by Hophead Farms, and we always use Lake Michigan water. We make one little IPA.

Our wine

We make wine from a mix of French and American hybrid grape varietals grown in West Michigan. We add no yeast and do no fining or filtration. We're all about sustainable, natural winemaking.

Our food

We're a single-origin sourdough bakery, using flour from Meadowlark Organic Farm in Wisconsin. Our pastry programme uses the same flour and fermentation principles, with commercial yeast strains added where necessary. We make our own pizza dough, and source our toppings from local farms and neighbours.
