Live Oak Brewing Company uses large, horizontal dairy tanks as fermenting vessels instead of the more traditional cylindroconical fermenters. They also use a combination of industry-standard step mashing and the more old-world style of decoction mashing for their beers.
Some of the beers available from Live Oak include the Grodziskie-Style Lager, brewed in collaboration with Goldfinger; the German Hefeweizen, with notes of clove, banana, and vanilla; the Oaktoberfest, a rich and malty Oktoberfest beer; and the Czech-style Pilsner, with a complex malt flavor and spicy hop bitterness.

Live Oak Brewing Company history
Live Oak Brewing Company is a locally-owned and operated brewery located in Austin, Texas. The company was founded in 1997 by two local homebrewers, Chip McElroy and Brian Peters, who hand-built the original brewery themselves. From 1997 to 2015, the brewery was run out of rented industrial space on East 5th Street in central Austin. In December 2015, the company relocated to a new brewery and taproom facility built on 20 acres of undeveloped land on the Colorado River, just north of the Austin-Bergstrom International Airport.
Live Oak Brewing Company produces four year-round beers and nearly 20 more seasonal or limited-release beers. The brewery uses industry-standard step mashing for most of its beers, but also employs a more difficult and rarely used old-world style of mashing known as decoction mashing for a few of its beers, including the Live Oak Pilz and the Oaktoberfest. Live Oak sources only the best authentic ingredients and uses a time-consuming mash and secondary lagering process, resulting in acclaimed beers that have achieved both regional and national recognition. In 2018, Chip and head brewer Dusan Kwiatkowski travelled to Grodzisk Wielkopolski, Poland, to learn more about the traditions of Grodziskie-style beer. They collaborated with Browar Grodzisk to create a Grodziskie Imperialne, with stronger notes of oak smoke and bitterness than traditional Grodzisk beers. In 2019, Live Oak Brewing took home a bronze medal from The Great American Beer Festival for their Hefeweizen.
